White Corn

Ripe Tomatoes

Ground White Pepper

Chili Powder

Chicken Stock

Blue Corn Tortilla Chips

Sharp Cheddar

Fresh Cilantro

1 can hatch chilies

Frozen Meatballs

Green Onions

Instructions:

  1. Slice corn tortillas into small squares and place in the large pot with olive oil. Put the put on a low heat and heat the tortillas until they are ‘golden yellow.’
  2. Chop onions, tomatoes, and mince and/or press garlic and set to the side in a medium size bowl until the tortillas are done cooking.
  3. Add the onions, tomatoes, and garlic to the tortilla’s to make a soup, base mixture. It might be somewhat thick before adding the chicken stock, however, that’s good, it gives the soup texture and makes the soup delicious!

Once the onions are transparent and soft, add the frozen corn, and spices, and let the corn. Cook throughly. Once cooked add the chicken stock, and meatballs, and cover and leave on a low heat until the soup is hot and ready to taste. This recipe is best to go by taste once warm and ready to eat. Always start with adding less spice because you can always add more spice to give the soup flavor at the end. Enjoy!
